Brown rice is my new favorite food. Because it’s such good friends with my other best friends: eggs and black beans. Good job, food friendships!
I basically just live on brown rice these days. Either with black beans, sweet potato, and a fried egg, or like this. Scrambled egg, whatever vegetables I find in the freezer (spinach! broccoli! peas!) mixed with whatever I can find in the fridge (onion! mushrooms on a super lucky day!) and a splash of soy sauce. Then hey dinner, you’re my favorite. Until tomorrow when you’re my favorite lunch.

I make a batch of baked brown rice once a week and reheat all week.
