The Perfect Summer Sandwich
Around here, summer means all the vegetables. Especially mushrooms. We’re finding different ways to eat mushrooms, though my favorite is to grill them with olive oil, kosher salt, and pepper. Perfect every time.
But when we can’t grill them up, cooking them inside works just fine too. Slow and steady.
Then tossed on some toasted rye with vegan mayo and local tomatoes. Served with eggs, of course. Always the eggs.
