Wicked Easy Granola Bars


We are terrible about eating breakfast. We never eat it, then are hungry and crazy by 11am. MCB sometimes buys granola bars to have for breakfast, but I can’t eat most granola bars. I’m sort of allergic to chocolate, most nuts, and I don’t like a long list of all the things people put in granola bars. And I like soft granola bars. Because I don’t really need to slice my mouth open when I reach for a snack, thanks.

We recently discovered that we can just make our own! Who knew? Don’t answer that. This is the only granola bar recipe I’ve ever tried, but it’s good and works, so why do I need to keep looking? More importantly, it’s wicked easy.

Wicked Easy Granola Bars

2 bananas
1t vanilla
2 cups rolled oats
1/2t salt
1/2 cup unsweetened dried shredded coconut
1/4 cup diced dried apricots
1T raw honey

Mash the bananas with the honey and vanilla until it’s a liquid. I use my Vitamix blender for this part. Mix apricots and coconut in a bowl. The stickiness of the apricots will hold onto the coconut and make it extra awesome. Add oats and salt. Mix up a bit until all is evenly mixed together. Because you’re not using much liquid, it will be hard to mix after you add the banana mixture. Now add the banana mixture. Transfer the goodness to a 9×9 pre-oiled pan (I spray mine lightly with olive oil) and bake at 350 degrees for 30 minutes. Cut and cool. We usually eat some right away with a cup of tea (or ice cream!) but try to ration the rest for weekday breakfasts.
